Spring brings an abundance of vibrant, fresh produce, and there's no better way to celebrate the season than with a refreshing spring salad (and some wine, too). This is a must-serve in our house, combining crisp sprouts, juicy strawberries, and nutty almonds with a honey-lime vinaigrette, creating a light and flavorful dish. Paired with a chilled glass of Rosé, and it's fair to say that it's a match made in heaven.

Kristin's Must-Serve Spring Salad

Ingredients: For the Salad:

  • 4 cups mixed spring greens
  • 1 cup alfalfa sprouts (sub with microgreens, if you prefer)
  • 1 cup chopped strawberries
  • 1/2 cup thinly sliced radishes
  • 1/4 cup crumbled feta cheese
  • 1/4 cup toasted almonds, sliced or slivered
  • 1 cucumber, diced

For the Honey-Lime Vinaigrette:

  • 1/4 cup extra-virgin olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

Prepare the Salad:

  1. In a large salad bowl, combine the spring greens, alfalfa sprouts, strawberries, radishes, feta cheese, almonds, and cucumber.

Make the Honey-Lime Vinaigrette:

  1. In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper until emulsified.

Assemble the Salad:

  1. Drizzle the vinaigrette over the salad and toss gently to coat all the ingredients evenly.
  2. Serve immediately with a chilled glass of Rosé.

Why Rosé? Simply because the crisp and fruity nature of a our Rosé perfectly complements the freshness of the salad. With notes of bright strawberry or vibrant violet, our rosé enhance the strawberries in the salad while adding a refreshing contrast to the tangy vinaigrette.
