This is a must-serve in our house, combining crisp sprouts, juicy strawberries, and nutty almonds with a honey-lime vinaigrette, creating a light and flavorful dish. Paired with a chilled glass of Rosé, and it's fair to say that it's a match made in heaven.
Kristin's Must-Serve Spring Salad
Ingredients: For the Salad:
- 4 cups mixed spring greens
- 1 cup alfalfa sprouts (sub with microgreens, if you prefer)
- 1 cup chopped strawberries
- 1/2 cup thinly sliced radishes
- 1/4 cup crumbled feta cheese
- 1/4 cup toasted almonds, sliced or slivered
- 1 cucumber, diced
For the Honey-Lime Vinaigrette:
- 1/4 cup extra-virgin olive oil
- 2 tbsp fresh lime juice
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
Prepare the Salad:
- In a large salad bowl, combine the spring greens, alfalfa sprouts, strawberries, radishes, feta cheese, almonds, and cucumber.
Make the Honey-Lime Vinaigrette:
- In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper until emulsified.
Assemble the Salad:
- Drizzle the vinaigrette over the salad and toss gently to coat all the ingredients evenly.
- Serve immediately with a chilled glass of Rosé.
